Brioche/ Challah Bread aka Country
French Bread
(Perfect for Bread Machines)
4 cups French Bread Mix
1/2 tsp. salt
1 Tablespoon gluten-free yeast
2 Tablespoon sugar
1 3/4 cups warm milk or water (110-115 degrees)
1 tsp. cider vinegar or 1/4 teaspoon ascorbic acid
1/3 cup melted butter or oil
2 eggs plus 1 egg white, lightly beaten
1 beaten egg for brushing top of bread
In a large mixing bowl, combine mix and salt. Dissolve yeast and sugar in warm water. Combine vinegar, oil, and eggs. When yeast begins to bubble, add to mix, then add egg mixture and beat well for several minutes, or until smooth.
Preheat oven to 375 degrees. Lightly oil a cookie sheet. Form bread into desired shapes. Dough can be rolled into 3-6 braids for challah or formed into two long baguettes. It's also delicious made into rolls. After dough is shaped, cover with oiled plastic and let rise 30-40 minutes. Brush with beaten egg. Sprinkle tops with sesame or poppy seeds, if desired, and bake until bread sounds hollow when tapped (15-20 minutes for rolls; 30-35 minutes for loaves). Bread will not be come very dark, but should have formed a firm crust. This may be made in a 9-x-5-inch loaf pan.
In the bread machine: Add ingredients in order recommended by manufacturer.
This is best baked on short (single rise) cycle or white bread setting. |

Preparing gluten-free foods for friends and family during the holidays is not as frightening as it may seem. Here are some guidelines to make mealtime celiac friendly.
• Cook your meal from scratch. Knowing exactly what’s inside your dishes by adding it yourself is the best way to avoid gluten contamination.
• Avoid cross-contamination. Even a trace of gluten can be damaging to people with celiac disease. Ensure all cooking surfaces, utensils and appliances are carefully cleaned.
• Read ingredient lists carefully. Many prepared sauces, dips and condiments contain hidden sources of gluten.
• Involve guests underline the importance of avoiding cross-contamination if the meal is not entirely gluten-free.
Cranberry Swirl Spice Cake
1 cup softened, unsalted butter or margarine
4 cups Old Fashioned Cake and Cookie Mix
2 tsp. cinnamon
1 tsp. nutmeg
1 tsp. cloves
4 eggs, lightly beaten
2 tsp. gluten-free vanilla
2 cups low-fat sour cream (check labels)
16 oz. can whole cranberries mixed with ¾ cup golden raisins
1 ½ cups walnuts
Glaze: (Mix together)
¼ cup confectioner’s sugar
2-3 tsp. warm water
½ tsp. gluten-free vanilla
Preheat oven to 350 degrees. Grease a 10-cup tube pan.
Dust with rice flour. Beat butter until fluffy. Combine mix with spices. Add mix to butter and beat to combine.
Add eggs and vanilla and beat well. Fold in sour cream.
Layer half of the batter in pan. Spread with half the cranberry mixture and sprinkle with half the walnuts.
Top with remaining batter, then cover with remainder of cranberry mixture and walnuts. Bake 60 minutes. Cool.
Remove from pan and drizzle with glaze. Serves 8-10.
Roasted Garlic and Eggplant Dip
Servings: 2 cups
Ingredients:
2 eggplants (about 2 lb/1 kg total)
6 cloves garlic (unpeeled)
1/2 cup (125 ml) light sour cream (Gluten Free)
1 tbsp (15 ml) each chopped fresh coriander and basil((or 1 tsp/5 ml dried))
1 tbsp (15 ml) Dijon mustard
2 tsp (10 ml) balsamic or red wine vinegar
1/4 tsp (1 ml) each salt and pepper
Preparation:
With fork, prick eggplants all over, place on lightly greased baking sheet. Bake in 375°F (190°C) oven for 35 minutes. Add garlic to sheet. Bake for about 25 minutes or until eggplants are very tender and garlic is roasted. Let stand until cool enough to handle.
Peel garlic. Cut eggplant in half lengthwise; with spoon, scoop flesh into food processor along with garlic Add sour cream; purée until smooth. Scrape into serving bowl; stir in coriander, basil, mustard, vinegar, salt and pepper. Cover and refrigerate for at least 1 hour or up to 4 hours.
