Preheat oven to 350 degrees. Lightly oil a 9" x 13" pan. Brown the crumbled sausage in a frying pan, remove from the pan, drain on paper towels, and set aside. Sauté onions and peppers until soft. Remove from pan and mix with sausage.
Place the potatoes in the pan and fry until browned and tender. Combine with sausage mixture. Add bread and spoon into prepared pan. Bake 40 to 50 minutes or until golden brown on top and casserole is set. Or refrigerate for several hours or overnight and bake 1-2 hours before serving. Serves 8-12.
