Satay Chicken Pizza
1 Glutino frozen pizza crust
1/4 cup Gluten free peanut sauce
1 boneless chicken breast, cut and cubed
2 slices provolone cheese
1/3 cup red onion, chopped

1/4 cup fresh cilantro, chopped
Olive Oil


1) Cube chicken breast and cook in medium pan. 
2) Clean grill, greasing it lightly with olive oil. Heat the grill using gas or coals to a medium-high heat. Grills vary, so adjust temperature accordingly.
3) Place the dough onto the grill, and cook for 1 to 2 minutes on each side, or until golden brown. Be careful not to burn the crust, as it cooks very quickly.
4) Remove the crust from the grill and add the chicken, red onion, cilantro, and provolone cheese.
5) After the toppings have been added, cover the pizza on the "warming zone" of your grill, and let the cheese melt.
6) Remove from heat and cut into fourths

Serves 1-2

Adding a Thai seasoning can make a huge difference and add a lot of flavor to the end product. Be sure to use a gluten free peanut sauce, or try making your own!
