Cheese Strata
·         8 slices Gluten Free Pantry Favorite Sandwich Bread, French Bread, Premium Corn Bread, or your choice of gluten-free bread
·         1 cup diced gluten-free smoked ham*
·         1/4 cup chopped green onion
·         2 cups grated mild cheddar or Swiss cheese (reduced fat cheese may be used)
·         6 eggs, lightly beaten
·         1 cup milk
·         1 tablespoon gluten-free Dijon mustard
·         Salt and pepper to taste
 
Preheat oven to 350 degrees.
1) Butter a cookie sheet and arrange the bread slices in one layer on the pan.
Sprinkle ham, onion, and cheese evenly over bread.
2) Whisk together eggs, milk, mustard and seasonings. Pour over bread slices. Bake 20-25 minutes or until bread is slightly puffed and edges are golden. Serve.
 
*For a vegetarian variation, substitute 1 cup chopped frozen broccoli, thawed and drained
