Lemon Squares
·         1 1/4 cups Gluten Free Pantry French Bread and Pizza Mix
·         1/2 cup butter or margarine, softened
·         1/4 cup confectioners’ sugar
·         2 eggs
·         1 cup granulated sugar
·         1/2 tsp. baking powder
·         1/4 tsp. salt
·         2 Tbs. lemon juice
1. Preheat oven to 350º.
2. Blend flour, butter and confectioners’ sugar thoroughly. Press evenly into the bottom of an 8-
x-8-inch pan . Bake 20 min.
3. Beat together remaining ingredients. Pour over crust and bake 20-25 min.
DO NOT OVER BAKE. (Filling will puff during baking, but flattens when cooled.)
Makes 16 squares.
