"This was my first attempt at making a gluten free cake. I was dubious to say the least. I had just started a wheat-free diet, and my son, who was home for Christmas, had requested a special cake with our family's favorite homemade caramel icing.
I didn't mention to him that the cake was GF...I just let him taste it. (I was holding my breath!) He took a bite and said right away ''Mmmm! Really good cake, Mom. Nice and moist.'' Whew! Was I relieved. I took a bite too, and he was right--it was good! Thanks!!"
