"Agree that this is better than any other pancake mix on the market...I put it down to the fact it contains almond flour, but I haven't been able to make anything else work by adding almond flour the way this does, so I put it down to Pamela's magic.Great pancakes that don't give anyone a bellyache like regular pancakes always did. Used as a flour substitute it makes a bechamel sauce that will make you weep. 2T Pamela's pancake mix, 2T butter, 1 cup milk...cook slowly until it tastes fabulous...10-15 minutes. Perfect base for al fredo sauce (add a cup of freshly ground parmesan), any cream soup (add mushrooms, potatoes, asperagus, broccoli, cauliflower, cheddar or whatever). "
