MOLTEN CHOCOLATE CAKES
·         6 Tbs. Beth’s All Purpose GF Baking Flour
·         1 tbs. Xanthan gum
·         4 oz. Chocolate Chips
·         1/2 c. butter
·         1 c. confectioners sugar
·         2 eggs
·         2 egg yolks
·         additional butter to coat soufflé dishes
 
Preheat oven to 425°. Combine flour and xanthan gum and set aside. In microwave, heat chocolate chips and butter on high for 1 minute or until butter has melted. Stir with whisk until all of chocolate has melted. Stir in sugar and whisk thoroughly to blend. In mixer, whisk together eggs and yolks on medium speed for about 3 minutes. Pour into chocolate mixture.
 
Spoon mixture evenly into 4 custard (or small soufflé) dishes that have been buttered. Place on a baking sheet and bake in oven for 14 minutes. Cakes are done when sides are firm and center is still soft. Remove from oven and let set 1-2 minutes. With sharp knife, loosen cakes and invert onto serving dish. Use chocolate syrup and whipped cream to garnish. Serve immediately.
