Peanut Butter & Jelly Cookies
·         1 cup sugar
·         1 tsp. baking soda
·         1 cup creamy peanut butter
·         1 large egg or equivalent egg substitute
·         ½ tsp. vanilla
·         Your favorite gluten free jelly/jam
 
Preheat oven to 350°. Mix together sugar and baking soda. Add peanut butter, egg and vanilla.
 
Mix well. Refrigerate dough about 30 minutes. Shape dough into small balls and place on greased baking sheet. With thumb, press down into center of each cookie and place small amount of jelly in center. Bake 10 minutes. Allow to cool on a rack, to allow cookies to harden.
 
Yield: approx. 2 dozen
