PASSOVER POTATO KUGEL
·         6 large grated raw potatoes, drained
·         1/4 cup potato starch
·         1 large onion, grated
·         1 tsp. salt
·         2 large carrots
·         1/4 to 1/2 tsp. pepper
·         2 eggs, beaten
·         4 tbsp chicken fat (or vegetable oil)
 
Grate potatoes, onions and carrots. Add eggs and dry ingredients and only 2 tbsp. fat. Mix well. Pour into greased baking dish (9x13 inch). Pour melted fat on top. Bake at 375 1 to 1.5 hours till top is crisp and brown.
