Sun-Dried Tomato Dip 1, 3-oz package sun-dried tomatoes, not in oil 1/3 cup fresh basil, packed 2 Tbs. balsamic vinegar 1 Tbs. extra virgin olive oil pinch salt and pepper 1, 15-oz can white beans, drained 1 clove garlic Soak tomatoes in 1 cup boil water for 15 min. Drain, reserving ½ cup of the soaking liquid. Place tomatoes, reserved liquid and remaining ingredients in a food processor. Process until smooth. |
