Lemon Poppy Seed Muffins
INGREDIENTS: 3/4 cup soymilk 1/4 cup unsweetened applesauce 2 eggs 1 tablespoon lemon zest, or zest of one lemon 1 large lemon, juiced 2 tablespoons poppyseeds
DIRECTIONS: Preheat oven to 350 degrees and line a muffin tin or spray with nonstick spray. In a large bowl, mix together soymilk, applesauce, eggs, lemon juice from the lemon, and lemon zest. Add in the muffin mixture. Whisk together, and then fold in poppyseeds until just blended. Divide into muffin tins and bake for 12 to 18 minutes or until an inserted toothpick comes out clean.
