Zucchini / Eggplant Appetizer 1-2 zucchinis or 2 medium eggplants sliced into ½” circles Gluten Free mayonnaise Glutino Gluten Free Bread crumbs
Preheat oven to 425. Spray a cookie sheet with cooking spray. Spread each zucchini or eggplant slice with thin layer of mayonnaise. Dip each slice into bread crumbs to coat. Bake in oven until golden brown and softened (about 10-12 min). Turn once. Serve warm or at room temperature.
