 Q1. Do you know of a source for gluten-free soft pretzels? My daughter has adjusted well to following a gluten-free diet, but really misses soft pretzels. Thanks, Pat
A1. Dear Pat, I am not aware of a company that makes soft pretzels. However, I believe that several of our cookbook authors have recipes for them. I know there is a recipe for soft pretzels in Bette Hagman’s “Gluten-free Gourmet Bakes Bread.” In addition, you can make them using our GFP Bagel Mix (#126089). Just follow the directions for bagels and form them into sticks. Brush the sticks with an egg wash and sprinkle with sesame seeds or coarse salt and bake them at 350 degrees for 12-15 minutes. Enjoy! Q2. My health food store has just gotten in some pills that are called gluten-ease. They say they have the enzyme that we need to process wheat gluten. The owners of the store say if you are not too sensitive to gluten, then you can take these and eat gluten. They say if you are very sensitive, they are good to take in case you ingest some without knowing it. Have you heard of these and do they work? Suzanne Stinebring Brownstown, IL
A2. Dear Suzanne, I’ve heard of gluten-ease, but I do not believe it is a treatment for celiac disease. I have not heard anyone say they tried it and it worked. Of course, if you ingest gluten without knowing it and become sick, I suppose you are willing to try anything. My advice is just to be careful and stay away from gluten-ease. Beth
Q3. Thanks so much for your helpful newsletter. I read it religiously. I was wondering about movie popcorn. There never seems to be a way to contact a theater without listening to all of the movie listings, but I would love to talk to a human at the theater about their popcorn ingredients. Do you have any idea if most movie popcorn is gluten-free? Liz
A3. Dear Liz, That’s a tough one. I occasionally eat popcorn in movie theaters and have never had a reaction that I know of. However, I get it without the butter flavor which is usually drizzled on the popcorn after they scoop it out of the popper. I did a little research on the Listserve and it seems that a lot of people feel the butter flavor is the culprit. In addition, a lot of people said they bring their own popcorn when they go to a movie, try our Lesser Evil products. While it’s not a definitive answer, I hope that helps. Beth
Q4. My doctor's Nurse Practioner has suggeted Red Rice Yeast to me. Would this be a gluten-free product? Mildred Hanrahan
A4. Dear Mildred, I believe your nurse practitioner is recommending this product as a cholesterol-cutting supplement. I did a little research on the internet and see that several supplement companies make this product. I would suggest that you call a manufacturer before you use their particular brand. However, I did find at least one that looks safe. It’s Nature’s Plus brand Red Yeast Rice. Beth
Q5. How do I maintain a good level of fiber in my diet without whole wheat? I use brown rice whenever possible. I also enjoy quinoa on occasion, Gail
A5. Dear Gail, There are many wonderful grains available to us including brown rice, millet, teff, Montina flour, quinoa, amaranth, chick pea flour and rice bran. All of those will help. I sprinkle a heaping spoonful of rice bran into my yogurt for breakfast. I also add one or more of the above flours to my bread mixes. In addition, don’t forget legumes. A handful of canned chickpeas or another bean can be added to salads. Drain the can and then rinse it thoroughly to remove excess starch. Best of luck, Beth
Q6. Dear Beth: I am Celiac as well as my 2 daughters. We observe the diet and are doing well most of the time. I also have a severe latex allergy- it is more then sensitivity- I have been in anaphylactic shock on 2 occasions . Any way of getting the word out about using latex gloves in food preparations. Many restaurants us these gloves for making salads, handling food in the preparation, etc. There are alternatives- vinyl gloves ... Please direct me to a place where I can get out the word... Mary G
A6. Dear Mary, That is a real concern. In addition to warning your server anytime you eat in a restaurant, you might want to contact the National Restaurant Association (NRA) in Washington, DC and alert them to this growing problem in food service. A RECIPE
Biscotti with Chestnut Flour
These stay fresh for several days so they are perfect to take along on your summer travels.
3/4 cup Glutino White Rice Flour (#106017M)
1/2 cup Dowd and Rogers Chestnut Flour (#956066)
1/2 cup Bob’s Red Mills Tapioca Flour * (#956096)
½ cup Bob’s Red Mills Almond Meal (#956003)
3/4 tsp. GF Pantry xanthan Gum (#126046)
1/4 tsp salt
3/4 tsp. g-f baking powder
3 large eggs
3/4 cup sugar
3 tsp. Nielsen-Massey Vanilla or Orange Extract (#956089 or #956092)
2 Tbs. vegetable oil
*use 1/4 cup tapioca starch plus 1/4 cup unsweetened cocoa for chocolate biscotti
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.
Combine rice flour, chestnut flour, tapioca starch, almond meal, xanthan gum, salt, baking powder and cocoa (if used). Blend well with a fork. Reserve
Beat eggs and sugar together until doubled in volume and very light yellow. Add flavoring and oil and beat just to combine. Sprinkle one-third of dry mix over egg mixture and fold in. Repeat until all the flour is incorporated. Add nuts and fold in (if used).
Drop the mixture in two lines along the narrow side of the cookie sheet. (Leave plenty of space between logs.) Use spatula to mound mixture up and make the logs narrow (about 2-3 inches by 8 inches). You may need to repeat a couple of times to forms logs as batter will spread somewhat. Quickly place into the oven.
Bake 18-20 min or until light golden on top. Remove and slide parchment sheet onto wire rack. Let biscotti cool for about 10 minutes. Cut diagonally into 1/2 inch slices.
Please cut-side down on pan and bake 10-15 min. or until dry. Cool completely and store in an airtight container.
Makes 30-40 biscotti.
Baked and cooled biscotti may also be dipped in melted chocolate or white chocolate combined with 1 Tbs. vegetable oil. Let harden on wax paper before storing.
